    Abstract
    Penggunaan natrium metabisulfit dan soda kue dalam pengolahan tepung kimpul dapat meningkatkan rendemen tepung kimpul, yaitu pada natrium rnetabisulfit didapatkan rendemen sebesar 24.3%, perendaman dengan soda kue sebesar 27.05% sedangkan untuk kontrol didapatkan rendemen sebesar 23.7%. Penggunaan natrium metabisulfit dan soda kue berpengaruh pada derajat putih, kadar air, kadar abu, kadar HCN, total fenol dan tanin dalam tepung.
