    Pengembangan produk olahan daging tengiri perlu untuk dilakukan, untuk mengetahui seberapa jauh pengaruh macam dan konsentrasi terigu dan maizena sebagai substitusi terigu, sehingga dihasilkan nugget tengiri yang mempunyai mutu fisik dan organoleptik yang baik dan disukai oleh banyak konsumen
