Analisis Kinerja Rantai Pasok Produksi Kopi dengan Pendekatan Supply Chain Operation Reference (Scor) (studi Kasus : Rumah Kopi Banjarsengon Jember)
Abstract
Coffee is a plantation commodity that has high economic value. Jember
Regency is one of the largest areas in Rast Java which has potential to develop
coffee commodities. The total area of coffee plantations in Jember is 16,882
hectares of coffee plantations, of which 5,601.31 hectares are smallholder coffee
plantations (Nurdiansyah et al, 2017). The demand for coffee in Jember Regency is
quite high, especially for robusta coffee. The high demand for coffee in Jember has
encouraged coffee industry entrepreneurs to increase production in order to meet
consumer demand. In carrying out these activities, the coffee industry must
cooperate with farmers and various institutions such as marketing agencies. The
activities carried out by industrial entrepreneurs, farmers and various institutions
have led to a supply chain pattern in which there are product, financial and
information flows. One of the industries in Jember Regency that processes coffee
and implements a supply chain pattern is the Banjarsengon Coffee House in Patrang
District. In carrying out its supply chain activities, in this industry there are
indications of problems related to fulfilling consumers and partner product demands
that have not been fully met. In addition, Banjarsengon Coffee House has never
conducted a measurement of supply chain performance based on the effectiveness
of its supply chain performance. With these indications of problems, it is necessary
to measure supply chain performance at the Banjarsengpn Coffee House, Jember.
This research is intented to determine the analysis supply chain,
performance of the supply chain at the Banjarsengon Coffee House Jember, and
improvement recommendations. The method used in this study was the Supply
Chain Operation Reference (SCOR) method. Supply chain performance

measurement is carried out based on the core process, and is described in each
attribute and matrices in the Supply Chain Operation Reference (SCOR) method.
The result of the analysis of supply chain activities at the Banjarsengon
Coffee House Jember by mapping based on the 5 core processes in the SCOR
method that were plan, source, make, delivery, and return. The result of measuring
supply chain performance when compared with the benchmarking data obtained,
there were several performance attributes that were still in an advantage position so
that improvements need to be made. Some indicators that were in an advantage
position is delivery performance (93%), order fulfillment (96%), order fulfillment
cycle (6 days), and daily inventory (0,31 days). Improvement of several indicators
such as delivery performance, order fulfillment, and order fulfillment cycles can be
made by optimizing the scheduling system (both in harvesting and production
processes up to delivery) by taking into account weather aspects. In addition,
improvements can be also be made to the drying process which still use sunlight by
using more advanced technology such as solar drying. Meanwhile, for daily
inventory indicators, companirs should not carry out daily inventories, because
coffee product that are stored for long wil affect the quality of coffee product.
