    Abstract
    Lama inkubasi 45 menit memiliki nilai tertinggi untuk kadar air, kadar abu, kadar protein terlarut WHC, stabilitas emulsi (ESI), serta tekstur gel. Hal ini memungkinkan sampel tersebut dapat memberikan hasil lebih baik pada beberapa produk pangan.
