dc.description.abstractOne of the main causes of food poisoning is associated with food safety issues such as biological (pathogens, resistance, contamination), chemical (heavy metals, pesticides) and physical (foreign objects such as sand, gravel, hair). The purpose of this research is to identify risks, analyze the frequency of risks in the raw material and grading processes, and formulate risk control policies. data analysis method using probabilistic risk assessment method with data calculation using arena and Minitab software for data fitting and cdf calculation. values with the highest frequency above 15% will be risk mitigation using root cause analysis 5 why. the results of data analysis showed that the biological aspects of raw material and grading were 18% and 29%, while the physical aspects were 8 and 10.4%, respectively. The recommendation for improvement given is to evaluate the environment in several ways such as land sanitation, crop rotation for environmental control and eradicating pests and diseases, conducting training and education to PT. MT27 farmers about the soil environment and the correct way of planting.en_US
