Sargassum sp is a brown algae group that contains fucoxanthin with a molecular
structure employing an allenic bond, an epoxy molecule, and a carbonyl group. This
structure provides antioxidant activity to fucoxanthin. This study aims to perform
fucoxanthin extraction and study the influence of extraction parameters (extraction
time, ratio of raw materials to solvents, and particle size) on antioxidant activity.
Sargassum sp is fed into a flask containing ethanol. Subsequently, the ultrasound
waves are introduced to the flask during the extraction time. The liquid product is
filtered off and purified by a rotary evaporator. A total of 17 experiments were
conducted on various extraction conditions. This work used the DPPH method to
determine antioxidant activity. This work achieved an optimum antioxidant activity at 10
minutes, the ratio of raw materials to solvents was 0.1 g/mL, and the raw material size
was 60 mesh. Meanwhile, based on statistical analysis, extraction time is the most
influential variable.
