    Abstract
    Terdapat 2 kriteria atribut sosis ayam substitusi koro pedang yang diperolehberdasarkan penilaian konsumen, yaitu: Konsumen “suka” pada atribut warna, kekerasan (Roughness), RonggaUdara (Blister), minyak pada permukaan (Oily), kepadatan, kelunakan, asin,gurih, amis, dan langu. Konsumen “sangat suka” pada atribut kekenyalan dan kemudahan saatdigigit. Tingkat penerimaan konsumen sosis ayam substitusi koro pedangmenggunakan metode Customer Satisfaction Index (CSI) yang dihasilkanyaitu sebesar 82%, yang berarti konsumen sangat puas.
