    Abstract
    Berdasarkan hasil penelitian dapat disimpulkan bahwa perlakuan yang paling tepat untuk memperpanjang daya simpan cabai merah adalah penggunaan pengemas plastik dan KMnO4 dengan konsentrasi 75% selama penyimpanan 14 hari dengan menghasi1kan pcnyusutan berat: 8,3200%, warna (a): 0,1554 (merah sedikit hijau}, kadar air: 66,9167 %, tekstur: 3,5933 mrn/10 detik (keras), vitamin C: 24,4233 (mg/100 g bahan), total asam: 1,1933 %, total padatan terlarut: 17,4600% dan kadar gula reduksi: 4,8000 %.
