dc.description.abstractWhite and red-flesh dragon fruit (pitayas) were cultived in Indonesia. The study analyzed physical and chemical characteristic of white and red-flesh dragon fruit encompass fruit dimension, weight and colour, sweetness, water content, indigestible insoluble fraction (IIF) content, and sugar content. Fruit dimension, weight, colour, sweetness and sugar content were refer to Wichienchot et al. research. Physical characteristic indicates significantly different between white dragon fruit with red dragon fruit. But not significantly different to the peel and seeds of red flesh dragon fruit and a white dragon fruit. Water content, IIF content and oligosaccharide content no significant among the white dragon fruit with red dragon fruit, but different levels of fruit dimension, fruit weight and fructose-glucose content. The other research reported that dragon fruit oligosaccharides showed prebiotic propertiesor in vitro. So for further research will study about prebiotic properties of white and red-flesh dragon fruit jam in vivo.en_US
