    Abstract
    used as antimicrobial properties. Several researchers have indicated that these properties were included in polyphenol compounds of coffee. This study aims to analyse polyphenol extracts of robusta coffee beans effect the damaging of S. mutans cell wall. Methods. This research is a laboratory experimental research by using the post test only control group design. The variables that will be observed are the damaging of S. mutans cell wall which are divided into two groups. Those are treatment and control. The treatment consists of four tubes containing polyphenol extracts of robusta coffee beans concentration of 100%, 50%, 25%, and 12,5%, whereas control is only contained of S. mutans. After incubating for about 370 C for 24 hours, the fifth tube was prepared to observe by using Scanning Electron Microscope (SEM), the method according to the reference in the Electron Microscope Unit and Integrated Laboratory School of Medicine, University of Airlangga. Damaging S. mutans cell wall were observed by morphology alteration such in size alteration, kern formation (blebs), and ghost cell formation. Results. The results of the research indicated to Mann-Whitney test for damaging S. mutans cell wall such in size alteration, kern formation (blebs), and ghost cell formation refers that polyphenol extracts of robusta coffee beans can effect the size alteration, kern formation (blebs), and ghost cell formation to the S. mutans cell wall significantly (p ≤ 0,05). Conclusion and Suggestion. The polyphenol extracts of robusta coffee beans effect the damaging of S. mutans cell wall such in morphology alteration such in size alteration, kern formation (blebs), and ghost cell formation. Further research is needed on the ability of other compounds from the extracts of robusta coffee beans in damaging the bacterial of cell wall.
