PENGEMBANGAN TIME TEMPERATURE INDICATOR BERBASIS EKSTRAK KEMBANG SEPATU PEMONITOR KUALITAS KESEGARAN BAKSO KEMASAN
Abstract
Anthocyanin is red purplish pigment found abundantly in fruits, vegetables and
flowers. Time Temperature Indicator based on anthocyanin was developed for
monitoring the quality of meatball stored at improper at temperature. The developed
TTI consisted of two membranes, namely indicator and acetic acid membranes.
