Abstract
Fresh milk is a perishable food, because it has a high content of 87-90% and has complete nutritional value so it is good for human consumption, therefore it needs to be processed to maintain its quality. One of the milk processing units in Jember Regency is Rembangan Dairy Farm. In this processing unit there is potential that can affect the efficiency of packaged fresh milk production, one example is the packaging process that only uses one machine where this can result in a long queue of materials. The purpose of this research is to identify the types and characteristics of operating variables in packaged milk production, design a production system simulation model, and build a scenario for increasing the production of packaged fresh milk. The method used in this research is to use ARENA simulation where this method is commonly used for system design and optimization so that it can help overcome the queuing problems that occur. The results of this study show that the initial production scenario model has a total process time of 16.2 hours with a total product of 152 liters of packaged milk. There are 3 types of improvement scenarios designed, namely, Scenario 1 by shortening the process time in the simulation model, Scenario 2 by adding process stations, and Scenario 3 is a combination of scenarios 1 and 2. The analysis results of the three types of scenarios that have been designed show that the most optimal scenario and can be applied to get optimal efficiency is scenario 3. The performance variable in this scenario has a total process time of 4.3 hours with the same total production.
