dc.description.abstractEdible film made from chitosan with addition red dragon fruit peel extract has been studied and based on results of preliminary research, the color of edible film is less concentrated, so the discoloration is less visible. Therefore, in this study red dragon fruit peel extract was used as a chitosan solvent. Besides being able to increase its color, it can also improve its mechanical and physical properties. Edible chitosan film - red dragon fruit peel extract contains anthocyanin of 4.99 ppm, so it can also be used as a pH sensor to detect fruit damage which is characterized by a decrease in pH. The treatment design in this study used 2 factor RAL, namely variations in 3 types of cut fruit (jackfruit, snake fruit, and melon) and days of storage (days 0, 3, 6, and 9). The application of edible film as a biosensor on several types of fruit which have different damage characteristics, of course produces different sensor colors as well. Therefore, it is also observed based on the days of storage. The result is chitosan edible film with red dragon fruit peel extract as a solvent has mechanical characteristics include tensile strength of 7.9925 Mpa, and an elongation of 31.2663%. While the physical characteristics are a thickness of 0.2587 mm and a dark purplish red color with values of (a) 37.72. The day of storage has a significant effect on fruit damage including total acid, pH, weight loss and texture, but has no real effect on the texture value of days 0 and 3. As the fruit is damaged during storage, the edible film is able to change color, which means it can act as a sensor. to detect fruit damage. Edible film is able to detect fruit damage through changes in color. The more damaged the fruit, the more faded the red color is, so the days of storage also have a significant effect on the redness value of the edible film applied to each fruit for 9 days of storage.en_US
