    Abstract
    Koro kratok ( Phaselus Lunatus L) merupakan salah satu jenis koro-koroan yang dapat digunakan sebagai sumber bahan pangan berprotein. dimana dalam setiap 100 gram bagian biji kering yang dapat dimakan berisi: 14,4-26,4 gr protein, 1,5 gr lemak dan 56 gr karbohidrat. pengembangan produk koro kratok lebih diarahkan pada pembuatan Isolat Protein.
