    Abstract
    Texturized Vegetable Protein (TVP) merupakan daging analog yang terbuat dari isolat protein kedelai melalui proses ekstrusi dan pemasakan. Produktivitas kedelai di Indonesia pada tahun 2017 hanya sebesar 675 ribu ton sedangkan kebutuhan kedelai mencapai 2,5 juta ton, sehingga untuk memenuhi kebutuhan tersebut harus dilakukan impor kedelai (Prasetyo, 2018).
