KANDUNGAN BAKTERI COLIFORM DALAM ES BATU PADA PEDAGANG KAKI LIMA DI JALAN KALIMANTAN KECAMATAN SUMBERSARI KABUPATEN JEMBER
Abstract
Ice cubes are food products that is well known by people that are generally
considered safe for consumption. The purpose of this study was to determine the
content of coliform bacteria in ice cubes. The method used in this study was deskiptif
to see the water sources, the process of making ice cubes and laboratory analysis.
The results showed that raw water sourced from untested well water and the ways of
making ice cubes that are still poor and not boil the water until boiling. Laboratory
test results showed that the ice cubes on all respondents, totaling 26 traders (100%)
were positive for coliform bacteria so it can't be consumed because of the amount of
coliform bacteria were more than 0 per 100 ml. The highest number of coliform
bacteria from the laboratory test results was 240 JPT/100 ml on 23 samples (88.5%).
While the lowest number of Coliform bacteria from laboratory test results was 16
JPT/100 ml on 1 sample (3.8%). Based on the results of this study it is expected that
the Health Department who oversee the safety of food or beverages should do
counseling on hygiene and sanitation of food or drink on street vendors, and conduct
periodic monitoring of the hygiene and sanitation at the street vendors.
