Abstract
Iodized salt is a term commonly used for salt that has been fortified by iodine. Human
needs iodine to produce the thyroxin hormone produced by the thyroid gland that
influences the process of normal growth and development of human beings. One of
prominent manifesting of iodine deficiency disease is the enlargement of the thyroid
gland, or called as goiter disease. Iodine is a reactive and volatile substance.
Inadequate storage techniques will affect the quality of iodized salt. The research was
intended to analyze the difference of iodine salinity based on the variations of vessels,
methods and iodized salt storage time. This research is an quasi experimental wiht
factorial design. The research consisting 8 experimental groups, such as closed
plastic jars for 7 days, opened plastic jar for 7 days, sealed package for 7 days,
opened package for 7 days, closed plastic jars for 14 days, opened plastic jars for 14
days, sealed package for 14 days, opened package for 14 days, and there is a control
group (no treatment) as the comparison. This factorial drawn up research design
consists of 4 repetitions (replication). By using the Kruskal-Wallis test, it is known
that there are significant differences in iodine salinity (P value = 0.001). The most
decreased of iodine salinity is in open plastic jar storage for 14 days. The iodize salt
should be stored in sealed vessel, it is not too big customised contents of salt, and do
not stored in a long time.
