dc.description.abstract | Berdasarkan penelitian yang telah dilakukan, diperoleh beberapa kesimpulan yaitu: 1.Perubahan yang terjadi akibat penggunaan Pulsed Electric Field (PEF) dapatmenurunkan aktivitas enzim protease hingga 88,5%, total mikroba 80-89%,aktivitas antioksidan 44,5% dan warna 2,43%.2.Penggunaan PEF diperkirakan dapat mempetahankan kualitas warna pureeedamame hingga lima minggu dua hari berdasarkan rumus persamaan lineardan memperlambat pertumbuhan mikroba selama dua minggu. | en_US |
