| Abstract: | Edamame (Glycine Max) memiliki kandungan serat 9,19%. Serat pangan tidak dapat dicerna oleh sistem pencernaan manusia dan mampu berperan sebagai prebiotik. Hasil penelitian menunjukkan bahwa perlakuan blancing dan frozen dapat mengurangi kadar total serat pangan edamame. |
