Abstract: Hasil penelitian diperoleh bahwa pengurangan berat adonan berpengaruh terhadap daya rehidrasi dan warna tetapitidak berpengaruh terhadap indeks kerapuhan sedangkan tebal pengepresan berpengaruh terhadap daya rehidrasi, kerapuhan dan warna dari flake sukun.
