Abstract: | Hasil penelitian menunjukkan bahwa konsentrasi Natrium metabisulfit berpengaruh nyata terhadap kadar air, kadar abu, residu sulfit, kecerahan, organoleptik warna dan berpengaruh tidak nyata terhadap kadar protein terlarut dan organoleptik aroma.Suhu pengeringan berpengaruh nyata terbadap kadar air, kadar abu, kadar protein terlarut, residu sulfit, organoleptik wama dan bcrpengaruh tidak nyata terhadap organoleptik aroma. |
