dc.description.abstract | Hasil penelitian menunjukkan bahwa penambahan vitamin C sangat berpengaruh terhadap gel miofibtil ikan. Peningkalan konsentrasi vitamin C menyebabkan peningkatan nilai tekstur, pembahan MHC hasil elektrotoresis dan struktur• dan dinding granula gel. Penambahan vitamin C 0.4% memberikan pengaruh paling baik terhadap kualitas gel miofibril ikan, dengan kadar air tertinggi 82,7 ±2,051%, cooking loss 40,0 ± 9,07%, memiliki tekstur 115,7 ±3,18 g/7 rnm , meningkatan nilai BM miofibril protein dan memiliki struktur matrik Jaringan yang semakin mengecil disertai dengan penebalan dinding matrik jaringan. | en_US |
