Abstract

Lactic Acid Bacteria (LAB) are bacteria that produce lactic acid as the main metabolite product through the fermentation process. LAB can be found in the digestive tract of livestock, including the small intestine of broilers. Most LAB species have been characterized as probiotic agents to improve the health and productivity of broilers. One of the important requirements for LAB as a probiotic is that it must be able to survive in extreme conditions in the digestive tract such as acidic pH and high NaCl concentration. This study aims to obtain data on the resistance of LAB isolates from the small intestine of broilers to acidic pH and NaCl concentration.. This study was carried out through several stages, namely rejuvenation of LAB isolates, pH resistance tests, NaCl resistance tests, and calculation of LAB survival rates. The result of the study showed that of the 7 isolates, namely U10, U11, U13, U16, U31, U33, and U37, all isolates could survive at pH 2,3,4 and NaCl concentrations of 2%, 4%, 6%, and 8%. Based on the results, isolate U11 had the best resistance to acidic pH and high salt concentrations compared to other isolates. Therefore, isolate U11 is the best probiotic candidate that can be applied to broilers to improve their health and productivity.
