Abstract

This study aims to analyze the effect of prebiotic Xylooligosaccharides (XOS) from rice straw waste on the total number of lactic acid bacteria (LAB) and Escherichia coli in Etawa goat milk during cold storage. Xylooligosaccharides resulting from enzymatic hydrolysis of xylan from rice straw waste were added to the drinking water of PE goats at 2% of their body weight for 30 days. The milk was then stored in a freezer (-16.7℃) and a chiller (4.4℃) for 10 and 20 days, respectively. After cold storage, lactic acid bacteria and Escherichia coli were isolated using the Total Plate Count (TPC) method. The results showed that XOS administration was able to increase the total number of LAB and suppress the growth of Escherichia coli compared to milk without XOS treatment during cold storage. Storage at chiller and freezer temperatures affected the dynamics of bacterial numbers, where longer storage tended to decrease the number of LAB due to limited nutrition, but still showed a better difference in milk with XOS treatment. Thus, the administration of XOS prebiotics from rice straw has the potential to improve the microbiological quality of PE goat milk during cold storage.
