Evaluasi Kinerja Supply Chain Management dengan Pendekatan SCOR Model Pada Industri Kopi Ketakasi Jember

Abstract

Ketakasi Coffee Industry in Jember faces challenges in supply chain management, particularly delays in product delivery and the suboptimal fulfillment of customer orders. These issues are caused by unstable raw material supply, high dependence on suppliers, and disruptions in the production process. Therefore, evaluating supply chain performance is necessary to improve the company's operational effectiveness. This study aims to evaluate the supply chain performance of Ketakasi Coffee Industry using the Supply Chain Operations Reference (SCOR) model and to formulate appropriate improvement recommendations. A descriptive quantitative approach was employed. Data were collected through semi-structured interviews and company documentation, including inventory, sales, and delivery records from January to December 2025. Supply chain performance was measured using four SCOR attributes: reliability, responsiveness, agility, and asset management efficiency, and the results were compared with SCOR benchmarking standards. The results showed that the overall supply chain performance was satisfactory. The standard conformity indicator (100%), flexibility, and cash-to-cash cycle time were classified as superior, while delivery performance, order fulfillment cycle time, and inventory days of supply were classified as advantage. However, the order fulfillment indicator remained in the parity category with a value of 93%, indicating that the company has not consistently fulfilled customer orders without waiting time due to unstable raw material supply. The study concludes that although the company's supply chain performance is generally effective, improvements in inventory management and raw material supply stability are still required. Recommended improvements include safety stock planning, long-term supplier partnerships, demand planning and forecasting, and a min-max replenishment system.
