dc.description.abstractThe nutrition transition refers to the shift in consumption patterns from traditional to modern 8 foods a trend increasingly observed in rural communities, including farming households. This shift is driven 9 by changes in social, economic, and food environments and has the potential to increase the risk of non-10 communicable diseases. However, the lived experiences underlying the process of nutritional transition in 11 farming households have not yet been extensively studied using a phenomenological approach. This study aims to explore the lived experiences of farming households regarding the nutrition 13 transition process, based on the Food Choice Process Model, in Garahan Village, Silo District, Jember 14 Regency. The study employed a qualitative design with a phenomenological approach. It 16 involved 11 informants comprising 5 primary informants, 5 additional informants, and 1 key informant 17 selected using purposive sampling. Data were collected through in-depth interviews and analyzed using 18 interactive analysis, with validity verified through source triangulation and dependability checks. Research findings indicate that a nutrition transition has occurred among farming households, 20 characterized by a shift in consumption from local foods toward instant foods, fast food, deep-fried snacks, 21 packaged beverages, and snack foods. These changes are influenced by life trajectories, life-stage transitions, 22 and reinforced by turning points specifically, shifts in children's food preferences and ease of access to modern 23 foods. Furthermore, the food selection process is influenced by idealism, personal factors, resources, social 24 context, and the food context, which shape the negotiation of values and behavioral strategies in choosing 25 food. This shift in consumption patterns has the potential to increase the risk of non-communicable diseases 26 among farming households. The nutrition transition in farming households is a process influenced by life experiences, 28 changes in life stages, the food environment, and behavioral strategies regarding food choices.
