Abstract

Coffee processing productivity is a crucial factor in improving the efficiency and competitiveness of the coffee industry in Indonesia. However, there are three local producers SKJ (Jember), DKB (Bondowoso), and BTS (Situbondo), that have not yet conducted systematic productivity measurements, where evaluations are limited to final output only. This study aims to identify the fluctuations in productivity and provide improvement recommendations to enhance coffee processing productivity at these three producers using the Objective Matrix (OMAX) method. The research was conducted over the period from July 2023 to September 2024, considering five main criteria: amount of raw materials, number of workers, working hours, fuel consumption, and number of defective products. The results show significant productivity fluctuations across both periods and locations. SKJ recorded its highest productivity in August 2024 and the lowest in July 2024. DKB reached its peak in August 2024 and lowest in July 2023, while BTS achieved its highest productivity in August 2023 and the lowest in August 2024. Based on a logic tree analysis, improvement strategies were formulated according to each site's specific conditions, including machine replacement at SKJ, workload distribution and labor adjustment based on raw material availability at DKB, and labor adjustment based on raw material availability at BTS.
