Analisis Kelayakan Finansial Pengembangan Produk Minuman Fungsional Cascara Tersubstitusi Jahe Merah dan Daun Cengkeh

Abstract

Cascara is a coffee cherry skin by product with potential as a functional beverage, yet exhibits relatively weak antioxidant activity compared to other functional drinks. This study aimed to analyze consumer acceptance, antioxidant functionality, and financial feasibility of a cascara functional beverage substituted with red ginger and clove leaf. A one-factor Completely Randomized Design (CRD) was applied across four formulations C0, C1, C2, and C3. Hedonic testing involved 30 panelists assessing color, aroma, taste, and aftertaste, while antioxidant activity was measured via the DPPH method. The best formulation was determined using the De Garmo effectiveness index and further evaluated for financial feasibility using NPV, Net B/C, IRR, Payback Period, and BEP. The hedonic test revealed that the highest overall acceptability was observed in sample C0 (3.725 ± 1.107), whereas the lowest was found in sample C2 (3.392 ± 1.063). The highest antioxidant activity was exhibited by sample C3 with an IC50 value of 21.56 ppm (very strong). Based on the De Garmo method, the optimal formulation was sample C3. Financial feasibility analysis yielded a NPV of IDR 132.296.051,99, a Net B/C of 2.12, an IRR of 41.33%, a PP of 2.20 years, and a BEP of 7,321 boxes with a margin of safety of 66.44%.
