Abstract

Antioxidants are compounds that can protect cells from the effects of reactive oxygen free radicals. One of the antioxidant compounds is vitamin C and flavonoids. Antioxidants can also be found in banana peels, one of which is the tanduk banana peel. This study aims to identify the flavonoid and vitamin C content in tanduk banana peels, the antioxidant activity in tanduk banana peel soft candy, and test the water content of the soft candy. The results of the identification of tanduk banana peels showed that the content of vitamin C and flavonoids with a value of 75,91 and 54,19 mg/100g at maximum concentration. The resulting content has a small value because the drying process is quite long, namely 17 hours. This study also identified antioxidants contained in tanduk banana peel soft candy. The results showed that the soft candy has an antioxidant content of 11% in the 24 g banana peel powder variation. This antioxidant content is relatively small, this occurs because of the drying process is too long and the manufacturing process. The soft candy was also identified for its water content, the results showed different values in each variation. This occurs because of the differences in the banana peel powder variations in the manufacturing process. Further research is recommended to optimize the drying time to minimize the loss of antioxidant compounds.
