dc.description.abstract | Nowadays food vendors (e.g. street vendors) are familiar in our society.
Hygiene and sanitation of food that are not properly considered can be one of the
causes of food poisoning. One of the diseases that often occur is diarrhea which can
be caused by infection of diarrhea-causing germ such as Escherichia coli. Lack of
cleanliness of tableware has an important role in the growth of the spread of germs
and poisoning. The objective of this research is to investigate the correlation
between food hygiene and the presence of Escherichia coli in tableware used by
street vendors at Kalimantan Street, Jember Regency. The method used in this
research was analytic by cross-sectional survey approach. Data were collected
through observation, and examination on the number of bacteria was carried out by
wiping tableware (plates). Data analysis used Chi-Square test. The results showed
that 73.9% of respondents had good food hygiene and 26.1% had bad food hygiene.
Examination results showed that 82.6% of germs did not contain Escherichia coli
and 17.4% Escherichia coli contained bacteria. Food hygiene correlated
significantly with the presence of Escherichia coli bacterium in tableware (p<0.05).
Street vendors are suggested to keep giving attention to sanitation hygiene of
tableware covering food handlers, utensils, clean water and vending equipment. It is
recommended to hold regular meetings to provide information about the importance
of cleanliness and regular monitoring for food sanitation hygiene on the sidewalk
