Abstract
A good coffee bean quality can be obtained only through proper and good management processing. After harvesting, coffee berry
needs to be processed into final form that is save during long time storage. Silver skinned coffee bean quality improvement needs to be
conducted by reprocessing using polishing material such as (sawdust, bran, and dry coffee skin) with various Rpm. Rotation per
minutes is a number rotation in one minute. In this research, three different Rpm which are 1000, 1200, 1400 used to get a maximum
processing result. The result showed that the best polishing material is dry coffee skin because it their texture is roughter than another
polishing material. Beside the best Rpm is 1000 rpm because it can produce the least amount of silver skinned coffee bean and also
