| Abstract: | Berdasarkan hasil penelitian ini, maka dapat disimpulkan bahwa, fermentasi daun kedelai edamame oleh R. oryzae dengan penambahan tepung kedelai mampu menurunkan kadar serat kasar daun edamame sampai hari ke-8, dengan kadar serat kasar sebesar 14,35 %. |
