Abstract: Coffee processing methods that are often used by coffee employers is wet coffee processing. Wet coffee processing needs water reached 7-9 m3 per tonne of coffee cherries. Coffee processing which takes a lot of water is a process of stripping and washing. The use of water will produce wastewater that causes environmental contamination if it directly discharged to the water bodies. Therefore, it need further handling in order wastewater safely to discharge into water bodies and require the industrial effluent standards which is stipulated by the Regulation of Environmental Minister of Indonesia Republic Number 5 of 2014, the maximum levels of COD 200 mg/l and BOD 75 mg/l, One of wastewater treatments before discharging into water bodies or river is phytoremediation method that use water hyacinth plants. The purpose of this study is assessing the time change hyacinth and analyzing the percentage reduction of coffee wastewater parameters. This study was done two repetitions, in each for 14 days using two different treatment that are changed and without changed of water hyacinth. The first treatment is carrying out if its leaf has withered more than 50%. Than, for the second treatment without making turning water hyacinth until the treatment is over. By phytoremediation using water hyacinth plants with the circulatory system can increase the value of TDS and pH of coffee waste. In addition, it can reduce the value of BOD, COD, turbidity, N and P. The efficiency of COD has decreased from 69.79 to 81.91%, BOD 65 to 81.99%, ammonia 72.40 to 76.02%, phosphate 19.84 to 86.59% and turbidity 87.3 to 90.03%. This study shown that changing of water hyacinth treatment is much lower value of BOD, COD, N, P and turbidity compared to treatment without a change of the water hyacinth. Substitution of water hyacinth conducted over three times within 14 days. Substitution of water hyacinth in the treatment of first repitation PE and second repitation PE is done on the seventh day, because the average water hyacinth that day reached saturated point.
