dc.description.abstract | Hasil penelitian menunjukkan bahwa metode pengeringan berpengaruh terhadap rendemen, kecerahan warna, kadar air, kandungan total policenol, dan daya antioksidan bubuk sari teh hitam. Sedangkan bahan pengisi berpengaruh terhadap rendemen, kecerahan warna, kadar air, kadar abu, kandungan total polifenol dan daya antioksidan bubuk sari teh hitam. Nilai rendemen bubuk sari teh hitam yang diperoleh berkisar antara 31,4293% sampai 59,8547%, kecerahan warna (L*) antara 57,233 sampai 70,333, kadar air antara 5,705% sampai 7,691%. kadar abu 2,7% sampai 9,5%, total polifenol, 89,936 mg/g sampai 250,495 mg/g, dan daya antioksidan 52,605 mg/g sampai 280,762 mg/g. | en_US |
