dc.description.abstract | Hasil penelitian menunjukkan bahwa jenis grit umbi berpengaruh terhadap karakteristik kimia flake yang meliputi kadar air, kadar protein dan kadar karbohidrat tetapi tidak berpengaruh terhadap kadar lemak dan kadar abu. Jenis grit umbi berpengaruh terhadap karakteristik fisik flake yang meliputi kecerahan warna, kerapuhan dan daya rehidrasi. Flake dengan karakteristik baik dihasilkan dari grit ubi kayu. Flake yang dihasilkan mempunyai kadar air : 6,19%, kadar protein : 10,40%, kadar lemak : 2,74%, kadar abu : 1,66%, kadar karbohidrat 79,01%„ kecerahan warna : 62,26, kerapuhan : 82,65 girnm2, daya rehidrasi : 66.62%. | en_US |
