Abstract: Longan fruit of JemSu variety or Jember Super is a longan fruit that grows in Sentool plantation, Jember district. Longan fruit has many vitamins and mineral content such as potassium, phosphorus, nitrogen, magnesium, calcium and zinc, in this research, longan fruit of JemSu variety was analyzed for potassium, calcium, magnesium and iron mineral content using atomic absorption spectrophotometry method. The mineral contents of the longan fruit were analyzed at a wavelength of 766.5 nm for potassium, 422.7 nm for calcium, 285.2 nm for magnesium and 248.3 nm for iron. The results of this research are conclude that the magnesium content of the longan fruit JemSu variety is higher than other levels. The average content of potassium, calcium, magnesium and iron in JemSu variety longan fruit is respectively 177.64 mg/100g, 127.81 mg/100g, 536.73 mg/100g and 11.67 mg/100g. This is likely influenced by several factors such as the type of longan, location and plant care.
